Tofu Cheesecake

Ingredients

  • 1 baked graham cracker pie shell
  • 2 lbs. LEASA tofu
  • 1 cup sugar
  • ¼ cup fresh lemon juice
  • ¼ cup oil
  • ½ cup honey
  • 2 tsp. vanilla
  • pinch of salt

Instructions

Step 1:
Preheat oven to 375° F. 

Step 2:
Blend ingredients in a food processor or blended until smooth and creamy. 

Step 3:
Pour this mixture into the baked crust. 

Step 4:
Bake for about 40 minutes or until small cracks begin to appear on the surface.

Step 5:
Serve well chilled, topped with fresh or frozen fruit.
