Cannoli (Makes 6)
Other Ingredients Needed:
2 cups of ricotta cheese
1/4 cup of bitter sweet chocolate chips
1/2 cup of confectioners' sugar
1/4 teaspoon of vanilla
6 sheets, LEASA Pasta Wraps
Pistachio nuts (optional)
1 egg white, slightly beaten
Cut a 6 inch oval out of LEASA Pasta Wrap and wrap around the cannoli tube with the edges slightly overlapping. You can seal the edges using the lightly beaten egg white and pressing it.
Heat vegetable oil for frying in a deep fry-pan. Fry the Leasa Pasta Wrap on the cannoli tube until golden brown, one at a time.
When golden brown, immediately grasp with tongs and hold tube vertically, allowing the shell to slide off onto a paper towel. Shake the tube as needed to loosen.
Allow shells to cool and prepare the filling.
Mix together ricotta cheese, chocolate chips, confectioner’s sugar, vanilla, and cinnamon. Add to pastry bag and stuff filling into the cannoli shells.
Dust with powdered sugar
Dip the ends in crushed pistachio nuts (optional)
