Spring Rolls


Firm Tofu

Other Ingredients Needed:
12-15 LEASA Egg Roll Wrappers
1 lb. LEASA Firm Tofu
2 cloves garlic
1 cube fresh ginger root, peeled
2 tbsp. soy sauce
2 tbsp. mirin
1 tbsp. oil
2 chopped scallions ( cup)
1 small bell pepper, sliced thin (1 cup)
1 stalk celery, sliced thin (1 cup)
1 cup sliced mushrooms
3 cups shredded cabbage
1 cups chopped bok choy


Step 1:
Cut 1 lb LEASA tofu into small strips or cubes.

Step 2:
Chop 2 cloves garlic and 1 cube fresh ginger root in a food processor.

Step 3:
Add 2 tbsp. soy sauce and 2 tbsp. mirin and blend together with garlic and ginger.

Step 4:
Pour blend over tofu pieces and let marinate.

Step 5:
Heat wok and add 1 tbsp. oil

Step 6:
Immediately add scallions, pepper, mushrooms, and celery to the hot wok and stir for 2 minutes.

Step 7:
Add cabbage, bok choy, and LEASA tofu. Cover and steam for 4 minutes.

Step 8:
After 4 minutes, stir, cover and steam 4 more minutes.

Step 9:
Finally, stir together.

Step 10:
Cut 1 lb LEASA tofu into small strips or cubes.

Step 11:
Bring one corner over and tuck around filling, then fold the two side corners over on top.

Step 12:
Roll it over, securing the top slap to the roll with a dab of water.

Step 13:
Deep-fry two spring rolls at a time in hot peanut oil or corn oil until golden brown.

Step 14:
Drain on absorbent paper.

Step 15:
Served hot with Sweet and Sour Sauce, mustard of soy sauce.
